Xmas Goose

One of the geese is prepared for Xmas dinner, I have him down in the wine cellar where it is nice and cool. This is my first time ever cooking goose and its great that its one of my own, I know it had a great life running around the place for the last few months. I'm going to use the Gordon Ramsey recipe from the BBC website.
